I'm not sure why "fizzy" would be bad. It's actually perfect sometimes, and complete shit other times.
My AT4050 is less fizzy, but still has a lot of "air" or "fizz" when compared to a SM7b on vocals.
My Royer R121 is dark as hell. When compared to a V69 for example, it's "dull as hell". (Dull may not be the best term). I'll go with "dark as hell". That's exactly why it get's used.
When money allows, I'll be buying a second R121. Does this help you understand?
For what it's worth, the SM 57 is "harsh" in the upper mids.
The SM7b is much more smooth in the upper mids (to my ears). I needed a harsher sound today, so I yanked the SM7b off my Marshall cabinet and tossed a 57 onto it. Exactly what I wanted.
