Hi all - I'm a newbie in these parts and wondering if anyone would be willing to make a call on a mic recommendation for myself in a live church setting.  

I've got a loud, strong voice, and vocally, I would compare myself to an Eddie Vedder or the guy from Christian Band 'Third Day'.  

I'm currently using a Sennheiser E815S, which has been good in live rock settings (clubs, etc), but in a church atmosphere, it has been poppy and hasn't done my vocals justice on the odd day that I am 'on'.  Any ideas?

Sounds like a sound man issue.  A lot of the sound personnel at churches that I have dealt with are volunteers that know very little about sound.  
If it works for clubs it should work in a church situation.

There's live sound...
There's "studio" sound...
There's post production for TV/Film sound...
There's broadcast sound.

Church sound IS live sound...and some of the bigger churches may incorporate others on the above list.

Sounds like you are dealing with idiots...albeit well-intentioned idiots...but idiots nevertheless.

Just for shits-n-giggles, try using an SM58...and see how that goes...
If the guy can't deal with the de-facto live standard, then there's no hope for him.

Ask the sound person if the bass roll-off is engaged, if not engage it.  And make sure he/she is using the PFL to set the input gain.
