recipe ideas for forum trolls
« on: June 02, 2005, 10:20:23 PM »

This thread is for single musician/forum hanger-outers that don't have wives that cook for them.  What is the standard fare at your keyboard table?  I guess pizza (oven-baked, not microwaved) is what I use for fuel while I wait for my millions to roll in and I can hire a cook.  I like to bake the pizza without a pan so the crust is drier and crispier.  I tried  pure convection baking but it left the bottom almost raw while the top and sides were done.  It sucked.  So now I use combo convection baking and at the end I sometimes turn on broil to make the water in the center go away.  I sometimes also put foil around the edge while on broil so that they dont get too brown.  Just thought I would share.

When I make a DiGiorno this way people cant believe it was frozen.  Heh.  Gourmet junk food.

Carved up a yellowfin about 110 miles offshore this past week and made some fine sashimi, damn if it wasn't the best.

Ah yeah.. I remember these days (single, that is - I'm still waiting for those millions myself, to hire that chef). My wife likes to cook, I'm lucky, but when she doesn't have the energy, I rattle off my list of single guy options:

Spaghetti. BBQ Chicken. Turkey Burger. Chili. Sloppy joe. Grilled cheese.

For some reason, it never ocurred to me to open a cookbook, so everything was cooked strictly on a "wingin' it" basis. Also, most of these things share ingredients - tomato sauce, bbq sauce, ground meat, rolls.

I've done some reckless things in my life, and eating my own cooking has to rank in the top ten! Seriously, I'm red/green color-blind, so I'd always cook meat until it turned into a hockey puck rather than worry if it was still raw.

funny stuff arco.

well, for those of you that need to impress a little lady, i got this cool recipe for ganache flourless cake from this book on desserts by the wolfgang puck dessert chef.  sherry yard.  she is a good writer. it is easy, believe it or not.

you heat 6 ounces of cream and 5 tablespoons sugar til it boils, then pour it over a crumbled up bar of unsweetened chocolate - it says 1/4 " chunks. 8 oz is a bar.  it melts together in a bowl as you turn it over and over, and this makes the ganache, which is a creamy warm goo of chocolate and cream.  it is good by itself... if you add more sugar it becomes frosting for a cake.  but don't do that now. then mix 2 eggs and a pinch of salt, a shot of whiskey, and a splash of vanilla in a separate bowl.  mix the two together gently. it is called folding, so it doesn't turn weird.  then pour it in tiny tart size dishes (ramikens) and cook it at 325 for 20 minutes.  it looks just like regular cake. this is a dish that will have a good impact on that person you care about.  or she will think you are gay and leave, then there is more for you. it is fun to make it, a good break from recording, and girls seem to like chef qualities, for the same reason we do, food that someone else makes tastes better.
