1" or 2" 703 in the ceiling grid?
It seems that 2" would be better but how much better?

Thick rigid fiberglass doesn't absorb "more" than thinner. Rather, it absorbs to a lower frequency. So thicker is always better. In this case, the very best thing you can do is pack the space between the joists completely with 12-inch thick R38 fluffy fberglass. Then you can get away with thinner rigid fiberglass in the grid, and you'll also have substantial bass trapping. Wall-ceiling corners are just as useful for traps as any other corners, so you could use 4-inch thick 703 in the grid around the perimeter for even more bass trapping.
