Oh, about the Samichlaus, I totally agree...
As I do for most of these special beers. I have an entire section of the studio where I age my special brews. Usually to about ten years give or take. I takes a lot of restraint not to open one up before they are ready.... Way to much stress.
And with all this great beer. Who needs wine!
The Sami we had on tap was for our Christmas party... It was already aged two years. Best I could do under the circumstances. Way to many people at the party to dig into my private stock. And I'm selfish with my beers.
Right now in my personal stock there's over 500 beers, and I keep those for special occasions. Here's one for example! Haha
That's a 1997... When kept correctly, it's really a beautiful thing.

I used to always age my beer, but the older I get the more I understand that some beers are indeed a lot better when new or fairly new. Then again, some beers are awesome when they are very old... sometimes up to over thirty years even.
I used to have 500-600 beers in my cellar, but I stopped buying quantities on a regular basis over a year ago because I didn't have room. Now I've installed a shelf system last summer and there's plenty of room. Meanwhile we've been pilfering from the cellar, so I'm down to a lot less bottles at the moment.
I used to have quite a bunch of beers from the 80s and 90s, but today I discovered I only have left one from 1976 (Maredsous 9), another from 1996 (Lindemans Lambik) and the rest are from 2000 and onwards. Well, lagering means they'll get older eventually. hehe
Wine can taste great, but I agree... beer can taste so good, you won't crave much else.
Good thinking about a tap for your guests. Chances are the majority of the people won't fully appreciate your cellar, and they'll be more than happy with your tap beers. I've had people opening very obscure and expensive bottles only to leave all of it...
A 1997 Samichlaus, that should be the original brewery then no? Sweet!
It seems the majority of beers in my cellar are either veeeeery strong and daaaaaark beers (10-17% ABV) or lambic. Because they age well, and last half a lifetimes sometimes.
Now, what LDC capsule is best for a 1997 Samichlaus? Can I use Mogami cables, or do I have to get Gotham?
