If I use a Lavry blue D/A converter, which has AES/EBU  outs what transformer do I need to go to Spdf RCA?

Aardvark makes an AES to SPDIF adapter that should work for you. Found it here...

There are transformers available from Neutrik that seem to do the job quite nicely... it's what we use at the shop.

I wouldn't even bother spending $$ on a transformer. It's a little known secret that many AES and S/PDIF circuits in these boxes are identical, with S/PDIF perfectly capable of accepting the higher AES voltage. Try making an AES to RCA cable and see if it works. If it locks, you've got it, if not, then go for a box. We are running AES out of SADiE straight into S/PDIF in for extra monitoring and it works perfectly.
