So ok I am cheap, I am wondering if I can buy a new unopened copy of Logic 5 platinum and install it on my brand new Mac book pro and then buy the the upgrade to Logic 7.2, thus getting Logic 7  for about 500$  Can I do this? Granted it would be easer to just buy the thing but I think saving 300 -400 $ might be worth the effort especially since I just bought this expensive computer. Any thoughts?

Yes. I bought Logic 5 and upgraded to 7. There was no need to install it, you just need the dongle.
