I have a nice pair of these mics, but they were built before the 'c' biasing came into being.
I'm wondering how difficult it would be to do the conversion. Also, I couldn't find a schematic online with step-by-step instructions for how to do this. Does anyone (Klaus?) have this information?

Any competent mic tech can do it. It's not that difficult. If you can't find a schematic, look at some M49 and M49c schematics to see how the self biasing cathode is implemented.
